Smoked Chicken Salad (Serves Two, Preparation Time: 20 minutes)
This delicious crunchy salad is a favourite with my husband and friends. The vegetarians please excuse, but I bet any salad without chicken or fish is simply unsavoury!
Ingredients
  • 4-5 leaves from a fresh bunch of lettuce
  • ½ each of medium sized red and yellow bell peppers
  • ½ a capsicum
  • 1 medium sized tomato
  • 1 medium sized onion
  • ½ a cucumber
  • 7-8 pitted olives
  • 1 gherkin
  • 2-3 jalapeƱos
  • 1 smoked chicken breast (about 150 gms)
  • Salt
  • Pepper
  • Dried herbs (mixed)
  • Thousand Island or any other low fat salad dressing
Steps
  • Tear the lettuce into small shreds and spread it at the bottom of a glass/ceramic dish
  • Cut tomatoes and cucumber into thin (round) slices and lay them over the lettuce
  • Shred capsicum and bell peppers into thin, long pieces and spread another layer
  • Slice the onion into thin rings, break the pieces further and spread yet another layer
  • Throw in the sliced olives, gherkins and jalapeƱos
  • Shred the smoked chicken breast into thin long pieces and spread it as the topmost layer
  • Sprinkle salt, pepper, mixed herbs and stir in the salad dressing
  • Toss lightly with spatula and serve fresh!!
