Sprouty Peanut Brown Rice Pulao (Serves 3-4; Preparation Time: 40 minutes)


Ingredient

  • 1 cup brown rice, soaked for 1/2 an hour in 3 cups water
  • 1/2 cup mixed sprouts (black chickpeas, whole green gram)
  • 1/2 cup finely chopped carrot
  • 1/2 cup French beans (cut into 1/2'' long pieces)
  • 1/2 cup peas
  • 2 tbsp refined oil
  • 3 tbsp peanuts
  • 1-2 bay leaves
  • 1/2 tsp cumin
  • 1/4 tsp turmeric powder
  • 1/2 tsp coriander powder
  • 1/2 red chilli powder
  • 1 tsp salt/salt to taste
  • 1/4 tsp garam masala
  • 1 small onion, finely chopped
  • 3-4 medium sized tomatoes, grated/ pureed
  • 5-6 garlic cloves, finely chopped
  • 1/2 tsp lemon juice
  • Finely c hopped coriander leaves
Steps
  • Wash 1 cup brown rice and soak it in 3 cups water for about 1/2 an hour

  • Take peanuts and roast them in a micro-safe dish for 3 minutes, let them cool, peel the shell and keep them aside

  • In a separate micro-safe dish take 2 tbsp oil, add bay leaves, cumin and garlic, microwave for
    2 minutes

  • Add finely chopped onions and peanuts, microwave for 3 more minutes

  • Add pureed tomatoes and all spices (except for garam masala) and microwave for 3 minutes

  • Now add the sprouts, carrots, peas and rice along with water, microwave covered for 18 minutes (when using white rice, add only two cups water and cook for 12-14 minutes)

  • Allow to stand for 3-5 minutes, uncover the dish and add lemon juice and garam masala, mix well and garnish with finely chopped coriander leaves
