Pancakes (Makes: 7-8 pancakes; Preparation Time: 30 minutes)

My husband and I got hooked to pancakes when we gorged on yummy pancakes at IHOP in Chicago in 2009. Back home, we tried Betty Crocker carton box premix, but could never get real good taste - until recently, when I my friend Nitya shared this wonderful recipe.

Pancakes are not only grown ups' favourites, kids love them too. My one year old simply loved it. Another good thing about this recipe are the numerous variations that are possible.

Ingredients (for batter)
  • 2 eggs
  • 2 cups of skimmed milk (full cream milk for babies' variant)
  • 2 cups of all purpose flour (use wheat flour for babies' variant)
  • 6 tbsp sugar (powdered)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • A pinch of salt
  • 1 tsp butter
  • 1/2 tsp butter/oil for greasing the girdle

Add-in variants  
  • 1 banana (grated) + handul of walnuts (coarsely ground), OR
  • 1 apple (grated) + handul of raisins + a pinch of cinamom powder, OR
  • 1/2 cups of choco chips
Steps

  • Beat the eggs in the mixer; add mik and continue to beat the mixture

  • Follow it up by adding drying ingredients and melted butter and mix well in the mixer

  • Take the batter out in a bowl and add the optional ingredients (banana/apple/choco chips) of your choice - add the fruits only if you intend to use the batter immediately otherwise cut fruits sitting in the batter will make the batter very runny

  • Grease the girdle with butter/oil and heat on medium flame (Surface is ready when a few drops of water sprinkled on it dance and disappear)

  • Pour by slightly less than 1/2 spoonful of the batter onto hot griddle, let it spread on it's own "(take a ladle, that makes pouring the batter easier)

  • Cook until edges are dry; turn; cook until golden

  • Serve hot; drizzle some maple syrup and powdered sugar; serve with fresh fruits such as strawberries and bananas
