Husband in the kitchen: Baked Maggi with Eggs and Mushrooms (Serves:4 ; Preparation Time: 45 minutes)

Like everyone else, I too like to have my Maggi, my own unique way.
While on any busy day, I religiously follow the instructions on the pack, this recipe is for those special mornings when one is in a mood for something more elaborate. I first surprised Ishita with this brunch recipe on a Saturday morning right after her pre-natal Yoga class; since then, its one of her favourite too!
This recipe is a cross between a baked omelet and an elaborate Maggi. You will need a whole lot of eggs, 2 packets of Maggi, some sesame seeds and mushrooms. It is a moderately complex recipe and can be enjoyed on a leisurely Sunday morning.
Ingredients
- 2 packs of Maggi and taste maker from one of them
- 3 egg yolks and 9 egg whites, whisked
- 1 tsp sesame seeds
- 3-4 cloves of garlic, peeled and crushed
- 1 inch ginger, peeled and grated
- 3 medium sized spring onions (only bulbs), chopped
- 1 pack of mushrooms, washed and chopped
- 3 tbsp of oil
- 2 tsp of sugar
- 1 tsp salt
- Soy sauce and vinegar, to taste
Steps
- Boil the Maggi (without the taste maker) in considerable amount of water; when cooked, drain and rinse with fresh water
- In a large frying pan, heat the oil and crackle sesame seeds; saute for 1-2 minutes on medium flame
- Add ginger and garlic and saute for another 1-2 minutes; add Maggi's taste maker and blend well
- Add chopped onions and mushroom and saute for 5-7 minutes on medium flame, stirring continuously; turn the heat down once onion is lightly browned
- Toss Maggi into the pan and mix well with the cooked onion and mushrooms
- Add salt and sugar to the whisked eggs and pour the creamy mixture into the frying pan
- Let the eggs cook with Maggi in the pan for just about 2 minutes; stir gently to make sure that the eggs spread evenly
- Turn of the heat and transfer the frying pan contents to a convection proof glass or tin dish
- Bake the Maggi for 15 minutes in the oven at 200 deg mark
- Add some soy sauce and vinegar while serving
