Pasta Salad with Sundried Tomato Pesto (Serves: 2; Preparation Time: 30 minutes)

Yet another Salad!?  My dear 'not-so-health-conscious' friends, please don't be put off -  this is one of the most interesting and delicious salads that I have ever had. However the  best part is that it comes with such few calories!! You have to try this one to really believe "Salads can also make you drool!!" 
Ingredients
  • ½ cup  OR 150 gms cup pasta (fusilli /penne)
  • 15-20 leaves fresh basil leaves
  • ½ Red bell pepper
  • ½ Yellow bell pepper
  • 6-8 Mushrooms
  • 2-3 bunch rocket leaves
  • Parmesan cheese Shavings
  • Chopped garlic (1 clove)
Ingredients - Sun dried tomato pesto
  • 100 gms sun dried tomatoes
  • 50 gms roasted pine nuts/walnuts/almonds
  • 2 tbsp olive oil
  • 25 gms Parmesan cheese
  • 1 clove garlic

Steps
  • Boil pasta as per the instructions on the pack

  • Grind the ingredients of the sun dried tomato pesto to get a thick paste

  • Grill bell pepper and mushrooms and chop them in fine long strips (you could cut them and sauté them in a pan alternatively)

  • In a large bowl,  mix the pesto and chopped garlic with pasta

  • Add strips of grilled bell pepper, mushrooms and basil leaves; roughly break the rocket leaves and add to the salad, season with salt and black pepper, toss the salad

  • Garnish with Parmesan cheese shavings (refrigerate for sometime if you like) and enjoy an absolutely delectable salad
