Baked Oatmeal with Apple and Nuts (Preparation Time:50 minutes)

- 3 cups rolled oats
- ¾ cup brown sugar
- 2 tsp baking powder
- 2 tsp cinnamon powder
- 1 tsp salt
- ½ cup butter, melted
- 1 cup milk
- 2 eggs
- 2 tsp vanilla extract
- 1 cup apples, chopped
- 1/2 cup mix of ground nuts (walnut, cashew nuts, almonds)
- A handful raisins
- Preheat oven to 350 deg C
- Mix oats, brown sugar, baking powder, cinnamon and salt in a mixing bowl
- In a separate bowl, whip two eggs with a fork; add milk, vanilla extract and melted butter
- Add the mixture to the oats and blend well; add apples and nuts, and mix yet again
- Transfer the oat mix in a baking dish, bake for about 40 minutes (until golden brown)
Allow the oatmeal to cool down, and pour cold or warm milk on a small serving in a bowl and enjoy this for breakfast OR add it to yogurt or eat it with ice cream.
You could also eat it as a granola bar, on the go!!
