Sabudana Vada (Serves: 3-4, Preparation Time: 30 minutes)

The 2012 fall-winter festivities have begun, both in the east and in the west.....Navratras, Durga Puja....Dusshera...Diwali...Christmas and, New Year's Eve! All these festivals and celebrations are all about family, good food, music and of course NO DIETING!!!

Sabudana Vada, whether as food while fasting, or as a snack, is superbly delicious. Since it is deep fried, it may not rate high on your health index, but it definitely hits the 'All Time Tasty Top 10'. I love them hot and crisp, just out of the Karahi (wok).

Sabudana Vada also makes me nostalgic about breakfast at the Symbiosis canteen. Sabudana Khichdi and vada were staple for breakfast for most of the sleepy Symbians trying to make that early morning dash for the first lecture. This post is especially for you, my fellow Symbians...

Ingredients
  • 1 cup Sabudana (sago)
  • 5 medium-sized potatoes, boiled
  • 1/2 cup roasted peanuts
  • 2 green chillies, finely chopped
  • 1 lemon's juice
  • 1 tsp black pepper
  • 1 tsp bhuna jeera (cumin powder)
  • Salt (Sendha Namak), to taste
  • A handful of coriander leaves, finely chopped

Steps
  • Wash and drain the sabudana, allowing it to stand in a vessel for 5-6 hours, preferably overnight; ensure that sabudana is not left wet at all, else it will turn lumpy (when soaked sabudana will swell up after 5-6 hours)

  • Boil the potatoes and grate/mash them in a large bowl; mix well with your hands

  • Crush the roasted peanuts with a pestle in a mortar; mix it with the spices, coriander leaves, lemon juice and green chilies

  • Combine the spiced peanuts, mashed potatoes and sabudana; ensure all ingredients are uniformly blended

  • Make small balls of the mixture and flatten it between your palms to give it an oval shape - your mix should be adequate for 12 vadas/cutlets

  • Heat the oil in a wok and deep fry the vadas till golden brown

  • Enjoy the crisp hot vadas with coconut chutney or coriander chutney
