Husband in the Kitchen: Microwave Upma (Preparation Time: 25 Minutes, Serves: 2)

There are some weekday mornings that are so hectic that every second matters. There is no room to make mistakes and no time for messing up with breakfast and starting over. 

Since I am so impatient and distracted in the kitchen, I invariably end up burning the omelet or spilling the milk. And an irritated start to the  day lingers on... For the super hectic mornings I discovered a dependable breakfast option, which guarantees consistent taste and is fool proof. When beginner cooks like me don't fiddle with the proportions, the cooking time and the steps, it tastes exactly the same...each time. I think only Maggi can beat this one in consistency and taste, otherwise its a true winner. Have a superb breakfast morning!

Ingredients

  • 1 cup sooji
  • 1 tsp mustard seeds
  • 4 tbsp oil
  • A few curry leaves
  • 2 Green chillies 
  • 1 big onion finely chopped 
  •  ½ cup shelled peas
  • 1 tsp salt
  • 1 tsp lemon juice
  • ¼ tsp red chilli powder 
  • 2 ¾ cups water

Steps

  • Mix  3 tbsp oil and suji in a flat glass dish; spread it evenly at the bottom of the dish and microwave for 2½ minutes

  • Mix again and microwave for another 2 mins; ensure that you mix it well and on time, otherwise the suji will overcook

  • Remove immediately and mix well; set aside

  • In a separate dish, add 1 tbsp oil, mustard seeds, curry leaves, green chilies, onion and peas; microwave for 4½  minutes

  • Add salt, red chili powder, lemon juice and water; gradually add the roasted suji, stirring constantly

  • Microwave covered for 4 mins

  • Uncover and microwave for additional 1½ minutes

  • Garnish with finely chopped coriander leaves
