No Bake Cookies (Preparation Time: 30 minutes; Makes: 24 cookies)

Who doesn't love cookies, and, if they are home made....even better! What keeps most of us away from making them at home is the elaborate preparation, followed by delicate baking. But, if I were to tell you the recipe of delicious peanut butter and chocolate cookies that do not require kneading or baking, would you be game to try?
 
Did I surprise you when I said 'no kneading and no baking'? Actually, I was pleasantly surprised when I discovered this gem of a recipe. I was searching for a quick and easy recipe for cookies to take along on my long haul flight to Delhi. I stumbled upon this one on Allrecipes, tried, and loved it! The cookies turned out nicely soft and gooey...like everyone's favorites. 

I call this one a super quick, no fuss recipe.



Ingredients
  • 4 tbsp unsweetened cocoa powder
  • 1½ cups white sugar
  • ½ cup butter/margarine
  • ½ cup milk
  • A pinch salt
  • 3 cups quick cooking oats
  • ½ cup peanut butter
  • 1 tsp vanilla extract

Steps
  • Measure all the ingredients and keep them ready

  • Keep two big trays lined with parchment/waxed paper/foil ready

  • Warm milk in a saucepan; add sugar, butter and cocoa powder and stir well

  • Add salt and bring it to a rolling boil on medium heat, then boil it for an additional minute (its critical you stick to the time, once the mixture comes to a boil, boil for exactly one more minute; if you boil it longer, cookies will turn out hard)

  • To the above, add the oats, peanut butter and vanilla and mix well

  • Take it off the heat, and working quickly, drop small rounds on the lined trays (an ice cream scoop works great for this), keep a little distance between he cookies

  • Allow them to cool, once they start firming up, you could improve their shape by gently pressing them with your hands into a round

  • Leave them on the tray for 3-4 hours, once they harden, you could transfer and store them in an air tight jar
